The story: Wynwood newbie KYU is making sparks fly in Miami’s restaurant scene with Asian-inspired dishes from a wood-fired grill and a commitment to sustainability. Former Zuma teammates Michael Lewis and Steven Haigh also offer an impressive list of cocktails ranging from classics to newfangled recipes with Asian flare. This week though, all eyes should be on the Negroni— the quintessential Italian aperitivo traditionally made with gin, Campari and sweet vermouth. KYU joins thousands of bars around the world in celebration of this legendary cocktails for a charitable twist. Each bar team is donating a portion of their Negroni Week sales to a charity close to their hearts. At KYU, the Mezcal Negroni honors the rustic-modern restaurant’s existing dedication to Trees for the Future. (They recently donated 10,000 trees to the organization for it to plant in Senegal as a way to compensate for the wood used for grilling.) Creyente Mezcal, slices of fresh blood orange, and of course, wood chips are aged for up to a week in a porthole infuser along with Campari, Pimms #1 and Carpano Antica sweet vermouth. Expect this smoky stunner served tableside from the striking vessel.
